Mint and Chamomile Popsicles

Soothing Mint

What better way to soothe an upset tum? This simple to make natural botanical infusion remedy will turn medicine taking into a treat for even an inconsolable child.

Ingredients

  • 40gm mint
  • 40gm chamomile
  • 600ml freshly boiled water
  • Honey to taste

Method
Place the herbs in a bowl and pour the boiling water over, pressing the leaves down to fully immerse them. Leave to infuse for 15-20 minutes to make a full-flavoured herbal tea. Strain the liquid into a jug and leave to cool.

If you wish to sweeten (and why not treat yourself as you . . . . ‘treat’ yourself!) then mix honey into the strained tea to your own personal taste.  Once fully cooled, pour the infusion into ice-lolly moulds or ice cubes and leave in the freezer until needed (or whenever you just fancy one!)

Storage
Will store perfectly in the freezer for up to 3 months.
