Summer coucous and tomato salad from Rob Smith

Tomatoes are one of my favourite crops to grow. I love that they come in all shapes and colours and they’re always the star of the show at my summer gatherings with friends and family.

This couscous and tomato salad is a fresh, vibrant celebration of the season’s bounty. A simple, yet flavourful dish, for me it completely encapsulates the essence of summer!

Ingredients:

  • 4 large tomatoes (any variety), diced
  • 1 red onion, finely chopped
  • 1 cucumber, diced
  • Handful of fresh basil leaves, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons vinegar (white wine or balsamic)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 cup boiling water
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • ½ teaspoon cayenne pepper (optional)

Method: 

  1. In a large bowl, combine the tomatoes, red onion, cucumber, and basil.
  2. In a small bowl, whisk together the olive oil, vinegar, garlic, salt, and pepper. Pour over the tomato mixture and toss to coat. Leave to marinate for at least 30 minutes.
  3. In another bowl, combine the couscous with the boiling water, cumin, paprika, and cayenne pepper. Cover and let sit for 10 minutes, then fluff with a fork.
  4. To serve, pile the marinated tomato mixture on top of the couscous. Enjoy as a side dish or a light main course.
